Cheesy Onion Casserole

I saw a recipe on Pinterest for an onion casserole.  It looked like French Onion Soup except in a casserole.  I made a few changes to the recipe to go with what I had on hand.  My sister and her kids were visiting and she really enjoyed the "casserole".  It came out almost like a soup or dip since I changed the recipe.  The onion casserole came out delicious and I will definitely be making this again in the future.  If I were expecting more people to eat I would add the bread to the casserole like the original recipe called for.  Because I knew that it would have to be stored in the refrigerator I chose to omit the bread so that it would not get soggy.  Below is the recipe with my changes.

2-3 Tbs butter or margarine
3 large Vidalia onions- sliced
2 c. shredded Three Cheese (8 oz.) (used Kraft 3 Cheese)
1 can cream of chicken & mushroom soup, undiluted
2/3 c. milk
1 tsp. soy sauce

Melt butter in a saute pan over medium heat, and add onions. Saute onions until clear, a little brown is ok. In a shallow 2 qt. casserole pan, layer onions, 2/3 of cheese and pepper to taste.
 
In a sauce pan, heat soup, milk, and soy sauce, stirring to blend. Pour soup mixture in a casserole and stir gently to mix. Bake at 350 uncovered for 15 minutes. Top with remaining cheese then place casserole back in oven and finish baking for 15 more minutes.
 
I toasted bread and served it on the side.  This allowed everyone to get as much or as little bread as they liked.  Some members of my family are diabetic, including myself, so we opted for less bread than others.  The recipe was delicious even without bread.  Some preferred it with toasty French bread but I ate mine with a toasted Kaiser roll cut into pieces to make perfect dipping size.

Almond Flour Bread

The other day I was watching one of the morning news programs and saw a dietician say that by cutting back on bread made with all purpose or wheat flour a person could lose 18 pounds in a few weeks just from not getting all the hidden sugars in the bread.  He recommended eating bread made with almond flour.  I looked it up on Pinterest and found a recipe.  I made one change which was I used plain greek yogurt instead of regular yogurt since the greek has more protein. The bread is very filling.  The consistency is very crumbly not like a regular loaf of bread.  I would not eat a plain slice of this bread but have been enjoying it toasted with some butter or cream cheese at breakfast.  Today I put some sandwich fixings on it and it was good.

 Ingredients:  3 1/2 cups blanched almond flour
3 eggs
1/4 cup melted butter
1 tsp. baking soda
1 cup plain greek yogurt
1/4 tsp. salt

Combine all of the ingredients in a bowl. Mix well with a spoon. Pour the batter into a greased 9x5 inch loaf pan. Even out the top gently with your spoon.
Bake at 350 degrees F for 45-55 minutes.

Use a toothpick or knife to double check the bread is cooked all the way through. The toothpick/knife should come out clean and dry when the bread is done.

Introduction

Hi..let me introduce myself.  I go by the name Simi Moon.  I recently was introduced to Pinterest.  I will be using this blog to share the items I create based on things I saw on Pinterest.  I am diabetic and after having gastric bypass surgery can't seem to eat much meat.  This means that many of the recipes that I see I can't make...not the way they are written at least.  I will be attempting to change recipes to fit my life...this means less or no sugar if possible.  I have already tried some recipes and will post on those later.
