Almond Flour Bread

The other day I was watching one of the morning news programs and saw a dietician say that by cutting back on bread made with all purpose or wheat flour a person could lose 18 pounds in a few weeks just from not getting all the hidden sugars in the bread.  He recommended eating bread made with almond flour.  I looked it up on Pinterest and found a recipe.  I made one change which was I used plain greek yogurt instead of regular yogurt since the greek has more protein. The bread is very filling.  The consistency is very crumbly not like a regular loaf of bread.  I would not eat a plain slice of this bread but have been enjoying it toasted with some butter or cream cheese at breakfast.  Today I put some sandwich fixings on it and it was good.

 Ingredients:  3 1/2 cups blanched almond flour
3 eggs
1/4 cup melted butter
1 tsp. baking soda
1 cup plain greek yogurt
1/4 tsp. salt

Combine all of the ingredients in a bowl. Mix well with a spoon. Pour the batter into a greased 9x5 inch loaf pan. Even out the top gently with your spoon.
Bake at 350 degrees F for 45-55 minutes.

Use a toothpick or knife to double check the bread is cooked all the way through. The toothpick/knife should come out clean and dry when the bread is done.
